A friend of mine gifted me with two lovely summer squashes from her garden and I was curious if any of my flist had recipes they could share with me as I'm hopeless when it comes to cooking experimentally, but I can follow a recipe all right.

I don't know any off hand... I used to have one but I lost it during one of my moves... do a Google search for a recipe... I came up with too many results to pass on. Hopefully you find something you'd like to try.

I recently found a copycat recipe for Black Eyed Pea's Squash Casserole, but haven't had a chance to test it, so I can't attest to how good it is. The reviews for it were really good, though. Would you like me to send it to you?

Mmmm I lurve zucchini and summer squash!! What I like to do is the following:

Slice the squash (I slice it into sticks a couple centimeters wide and generally leave out the seeds just because those are hard to digest, but I know others keep them in)
Put some olive oil in a frying pan and heat on medium/high until the pan is heated
Put in the squash and frozen diced onion (to taste, I usually put in between 1/4 and 1/2 a bag)
Add a spoonful of garlic
Add a dash of spices (I use Mrs. Dash)
Cook until onions are brown and the squash is lovely and soft

I like just squash sliced up and then cooked in a skillet with a littl olive oil, salt, and pepper. Nom nom nom nom
