Sophie Kinsella books (ex. Can You Keep A Secret? and The Undomestic Goddess) definitely fall into this category for me. They are fun, funny, and have a dash of that sweet, hopeful romance that of course, falls apart and renews itself before the book comes to an end.
I believe James Patterson and Janet Evanovich also fit the bill on this one. Patterson because his mysteries can be devoured in one sitting. And Janet because her Stephanie Plum series is so engaging and entertaining, even if it does nothing to increase mental intelligence.
And before I forget, I should also mention Chelsea Handler's My Horizontal Life: A Collection Of One Night Stands. It's pretty much one of those guilty pleasure books where it's awful and yet, still funny.
